Mystery Meat

I've been trying to use up things in the freezer, so I decided it was time to get out a piece of meat that's been in there for a while. Oddly, it wasn't labeled but I thought when it thawed, we'd figure that part out. I told my carnivorous husband that he had a piece of meat to cook for supper and I'd have something else. When he got ready to cook it, he said it was a chicken leg that he didn't like the looks of and didn't want to eat it. Well, we certainly don't want to eat bad meat here, so out it went. However, as I was handling it again, I figured out that it was the innards of a chicken. and it would have been just fine to make a broth with even though we don't like to eat organs. That is if we'd only figured that out before it had spent much too long on the counter.  :( Now, I don't know how it ended up in the freezer without a label, but I'm going to claim that someone else did that. Because you know, that I never make mistakes or at least that's what I tell my family. :)

It's week three in our renewed efforts to have more control over meals and all is well--meaning I don't feel guilty when I think about what we've been eating.  This week I had a plan, (wait, yes, I did say that I had a plan!) and after a week of good home cooked meals, we're going to have a nice supper of leftovers tonight.

This Week's Food Waste


I'm very happy that I got to this week's food waste before it exploded all over the refrigerator. I had a sealed bag of pineapple that I was going to eat with cottage cheese (one of my favorite combos). However, apparently I didn't do that soon enough because when I took it out yesterday the bag had expanded to a tight pillow shape. I think some good fermenting was going on in there. So away it went.


This Week's True Food Confessions

This week included the rescues of a butternut squash and French toast from some old bread. We also had a blast from the past with hamburger rollups. Haven't had those in years.

Despite great urges this week to default to the old system (eating out or take out), we ate at home all days except one. And that was a special day when we visited Wally and took him out to his favorite hamburger place.

This Week's Food Waste

I had to throw away a molded bagel this week, but I saved another one. My husband brought home some leftover bagels from work--which was great. But I think I know why they were leftover. They were not very popular flavors and we didn't like them that much either. So we let them set around until there was only one left that hadn't molded. (Like somehow we were going to suddenly develop a taste change while they sat around.) But I'm very pleased to say that I made that one into a bird feeder. I coated the bagel with crunchy peanut butter and hung it outside for the birds. And when I have time to get to the store, I will coat the peanut butter with some sunflower seeds. Such a simple and fun idea. If you're looking for an activity to do with the kids one day, you might try it.


This Week's True Food Confessions


I'd say that this week was a vast improvement over the recent past. The menu plan never quite came together, but the work-with-what-you-can-find did because there were no trips to the grocery store. That resulted in a big pot of chili, loaded baked potatoes, roasted carrots and hot dogs, breakfast burritos, spinach salad, and a couple of pizzas with added mushrooms. And for added treats, we had apple muffins that the little girls next door baked and some M&M's. Oh, I guess we did go to the store. Ward made a little wooden bowl that he determined was just the right size for a good serving of M&M's. So, of course, we had to go buy some to see if he were right. I think he was, but more testing may need to be done in the future. :)

This is my token Halloween part of this post. It actually has little or anything to do with the main food topic. However, I was very intrigued by the way this pumpkin was carved. Status Update
It's been 1 1/2 months since I did one of these posts and it's time to get back on the wagon. Since the last post, things have been busy and sometimes stressful. And when that happens, one of the first things to go are meal planning and cooking. I know that it's not that way for everyone as some of you find cooking relaxing or it's so second nature that you don't often consider alternatives. But that's not the way it works around here. More and more eating out has been happening along with more and more consoling sweets. (The consoling sweets may stay around for a few more days with leftover Halloween candy.)

And how about our food waste? That's still doing pretty well, but should do even better once we start eating at home more. I do a pretty good job of working in whatever we have into the meals when I'm actually cooking them.

We'll see how it goes next week. I need to remember that slow and steady wins the race.

I've gotten out of the habit of reporting on these endeavors and it's time to get back on track after being absent for a month.

Overall the food waste hasn't been too bad but we certainly have had some. With an abundance of  garden produce this summer has also come a few tomatoes and a cucumber that have gone bad before we used them. Also down-the-drain went a jar of mayo and a jar of BBQ sauce. The mayo got left out on the counter overnight after using it for a tomato sandwich. Also I decided it was time for some BBQ sauce to go. It's been in the fridge for over seven years. (Yes, I said seven years.) I didn't like the taste of it and apparently neither did anyone else. 

 
Some of the things we've enjoyed eating recently.


As far as our eating, it hasn't been too bad either.  Our eating-out has been an occasional Chinese takeout or Subway sandwich except for the week we were on vacation. There we ate out every night after having breakfast at the hotel and peanut butter sandwiches for lunch. As I mentioned above, we have been enjoying fresh things from the garden. Many of our meals have centered around watermelon, cucumbers, squash, beets, brussel sprouts, beans,  zucchini, and tomatoes. Also, Ward tried out his new smoker with a chicken and some ribs. And I'm happy to report that it worked well. Also, we recently tried a recipe for crock pot lasagna. That was also a hit. 

As much of the garden produce is done for the year, I'm going to have to start planning more. This summer's meals have mostly been guided with what fresh vegetables we had to work with. Wish me luck with the planning as this has never been my strong suit.

At least none that I could find with a quick look in the refrigerator. However, the proof will be in the pudding this weekend when the fridge gets a good cleaning.


This Week's True Food Confessions
 
I had this chopped salad for at least 3 different meals.
Ward has been away for the last week and a half and during that time, I really didn't worry too much about food. When I was hungry, I ate whatever I could find. However, when I thought about it, I realized that I hadn't done any cooking while he was gone--meaning that I didn't turn on the stove, oven, or any other cooking device. And that shouldn't come as a big surprise to anyone who reads here regularly, so I don't know why I was kind of surprised when I figured it out. It's not like I gravitate towards cooking on any kind of voluntary basis usually.

So what did I eat? I was lucky that I had several fresh vegetables on hand to use in various ways. I had sandwiches with tomatoes, cucumbers, peppers, lettuce, and onions and sometimes cheese. I had mustard and cheese sandwiches with onions. Sometimes I had meat with my lettuce, onions, peppers, and tomato sandwiches. To change things up, other times I had a bowl full of diced tomatoes, cucumbers, and onions with Italian dressing. Other times, I would add cottage cheese to this. I don't know if you're seeing a trend here, but except for my bowl of cereal at breakfast, I had onions at every meal. You see, Ward really doesn't like onions--especially the smell of raw ones. So while we do have onions occasionally, I try not to have them around too much. I took advantage of this time he was away, and ate onions to my heart's content. 

Now that Ward's back, I might turn on the stove again. Maybe.

I had my eye on the prize this week, so I had no food waste. I plan to keep this vigilance up for next week. Wish me luck.


This Week's True Food Confessions




The meals this week were focused on preventing food waste as mentioned above. First, we had some left-over chicken and some yellow zucchini to use. This turned into a zucchini casserole with chicken and a salad. The salad had cherry tomatoes in it that were just starting to shrivel. The zuchinni-chicken meal lasted us for two nights. 

Next, I had some hamburger buns and pizza crust languishing in the fridge. The pizza crust came from an almost disaster a few days before. As I was taking a pizza out of the oven, it started to slide off the pan. I managed to catch it before it hit the floor, but about a quarter of it lost it's toppings during the save. So I retopped it with jar sauce and some fresh tomatoes and mushrooms that needed to be used. I also added cheddar and feta cheese for a really tasty result. I did the same thing with the hamburger buns after toasting them. 

Now I had a jar of open tomato sauce, so we had this over spaghetti the next night. I added some fresh tomatoes and basil to fix it up a bit and to use them up before they started to go bad. I also made a fruit salad to add to this meal from some ripe peaches and blueberries. And speaking of fruit, we also had some very good yellow water melon from Uncle Billy's garden. 

It was good week. I realize that some of you cook like this three meals a day, but not me. My interests and time usually lie elsewhere, so I'm gonna have to say that I am very pleased with this effort on both the Food Waste and Food Confessions fronts. :)

My Food Waste Friday post is a little late because we've been having internet problems. However, things are getting a little loosey -goosey around here in the food department, so I figure it was better late than never. I think I need a little more public accountability these days to get back on track with both not wasting and better eating.

This Week's Food Waste

Very disappointingly, we recently had some cheese slices go bad before we ate them. We also lost some lettuce and half a cucumber. And maybe other stuff. It certainly seems like there has been more, but I can't remember. That's what happens when I don't report on things in a regular fashion. Hopefully, I won't have much waste next week, and that will be because we were very good about not wasting, not because I can't remember. :)




This Week's True Food Confessions




Okay, let me confess. We had pizza three times last week (two carry out and one from the freezer).  Now  there's nothing wrong with having pizza three times in a week. In fact, Ward was quite happy about it. However, having pizza three times in one week because nothing is planned, is not the best. Once again, our eating patterns over the last couple of weeks has been hit or miss. We have had some very good meals with fresh veggies from the garden and some good carryout meals from Subway and Dominoes. But for next week, we need a plan. That's what we need for next week. A plan. Do you think if I say it often enough, one will materialize? A plan, we need a plan. Nope. That's not working. Guess I'll have to do it the old fashioned way. Check what we have to work with, what our schedules are for next week and make a meal plan. Sigh.

On another food front, let me tell you about Theo and radishes. Radishes have been on sale recently at Aldi's and Theo has been experimenting with them. First he sauteed/fried them with a little oil and salt. The general consensus was that the radishes fixed that way were pretty good. They were sweet with just a little of the radish bite to them. He also added them to a stew with other vegetables in the slow cooker. He reports that he wouldn't cook them again this way. While they were okay to eat (meaning he finished the dish), they weren't that good. I had never eaten radishes any way except raw before, so I found these experiments interesting.

This Week's Food Waste

We've been doing pretty well preventing food waste recently. Today to continue with this vigilance, we will have to plan our meal around the refrigerator vegetable drawer. The only thing that we know for sure that we're having for today's 4th of July cookout are hamburgers. After a look in the fridge, those will need to be supplemented with grilled zucchini, mushrooms, and onions along with a green salad. Also, Theo wants to saute some radishes. I've never had anything but raw radishes, so I'm interested in how those will turn out. Anyway, I think the fridge will get pretty clean with the above menu and hopefully next week I can also report no food waste.


True Food Confessions

When we haven't been having takeout Chinese or Subway sandwiches, here are a few things we've been eating. We have been enjoying greens from the garden for both salads and cooking. Also, we resurrected the ever-favorite foil meal and experimented with Portobella mushrooms that we found on sale. Add in a couple of casseroles, and all in all, it's been pretty good eating around here.

 As some of you may have noticed, I've stopped posting every week about our eating. There have been a couple of reasons for this, the biggest one being that I got distracted by other things and got out of the habit of taking food pictures. However overall, I'd say that we've been doing pretty well. With just two of us here most of the time, a little cooking goes a long way. Thank goodness we like leftovers. However, we are slipping more and more into takeout for dinner, so it's time to get back on track. Next week that is. Now it's time to head to the beach. :)

Once again, I didn't quite make it to the bottom of the bag before some turned slimy. However, things should go better this week because I have fresh lettuce from the garden. That always seems to do better than bag lettuce from the store.

This Week's True Food Confesssions
 
I woke up this morning thinking about creamed peas and new potatoes. And then I also realized that it was West Virginia Day meaning that on this day 151 years ago, West Virginia became a state. So it seemed like the perfect time to talk about West Virginia food. I realize that with a population of almost 2 million, not everyone eats the same thing in West Virginia, but I think my growing up experiences are fairly common.

Much of the state is rural and most people have a garden of some kind. That means it just wouldn't be summer without tomatoes fresh from the vine. But before the tomatoes ripen, one of the earlier treats are creamed peas and new potatoes. When the first green peas get ripe, new potatoes are dug. The peas and potatoes are cooked with a white cream sauce and you have your first special supper from the garden that season.

Around the same time (or a little sooner), the leaf lettuce is ready for picking. That means it's time for a dish of wilted lettuce. For this, bacon is fried, a little vinegar and and sugar are added to the bacon grease, and that dressing is poured over lettuce and green onions. Yum.

Speaking of green onions, what a treat. Even those who don't like onions will eat a few green onions in the spring. With their tender white bulbs and tasty green stalk, they are the perfect accompaniment to most any dish. Some people like to eat them with butter on a sandwich, but most just like them plain or with a little salt.

And now back to my favorite--tomatoes. If everything goes just right, the first tomatoes are ripe in early July. Then it's time for big juicy slices of tomato to accompany every meal. My favorite way to eat them is with cottage cheese or on tomato sandwiches. 

Also along about this time, the green beans are ready for picking. These can be steamed, pickled, or simmered for a long time with ham. This method may not be the most nutritious, but, boy, are the beans good when cooked this way.

Soon after the beans, corn will be ripe. Okay, maybe this is my favorite—just picked (within the hour) corn-on-the-cob with butter and salt. Now I'm drooling and I haven't even told you about the cucumbers or fried squash.

As you can see, my favorite food changes every week or two during the summer as something new ripens. There's a lot more to talk about in regards to WV food, but I think you get the idea—a lot of it is based on something that is grown in the backyard, side yard, meadow, field, or hillside.

Another time, I'll talk more about this subject, but for now, I have to go get something to eat.

I knew that we had some potatoes that had to be used soon, but I didn't quite make it to them soon enough. We had one potato that was unsalvageable. If it had only been shriveled, I would have soaked it and used it. But alas, it was rotting too. Oh, well. The other two made some good fried potatoes.


This Week's True Food Confessions


I grew up in a time and place when bacon was king. Every morning, my hard-working, lineman father would have bacon and three eggs, over-easy, for breakfast. This meant an accumulation of bacon grease in our grease can. Some people kept their grease can on the stove, but my food-safety-conscious mother kept ours in the refrigerator. But nevertheless, we always had a delicious supply of bacon grease to cook with. And, boy, did our food taste good. However, we eventually became enlightened nutritionally, and my father started having a bowl of Total cereal every morning instead of bacon and eggs.  That made it hard to fill the grease can and at some point it was gone all together. We adapted, but we still occasionally drooled over the thought of over-easy eggs and potatoes fried with bacon grease.

So last night, I was having a bit of nostalgia and we had bacon for supper. This was for two reasons--one was to try out some naturally cured bacon (it was good), and two was to have some fried potatoes and wilted spinach-- both of which can't really be done properly without bacon. At least, not from my perspective. And to round it out, we had roasted asparagus. We were lucky because the spinach and asparagus were fresh from Uncle Billy's garden.

I got a bit distracted with my malfunctioning camera, and burned some of the fried potatoes, but the rest were good.  Almost as good as I remember Mrs. Shepherd's were. Mrs. Shepherd was a neighbor who kept her grease can on the stove and had fried potatoes every night for supper. I loved visiting her around that time. I also wilted the spinach in the bacon grease. Yum. So last night, we had a delicious supper where I managed to slip some vegetables in with our bacon. :)

This Week's True Food Confessions


Years ago, Ward's grandmother gave me a set of microwave specialty cookware. She bought it for herself with great ideas that she was going to be doing all kinds of complicated cooking in her microwave. She had never been much interested in cooking, but microwave cooking (fairly new at the time) piqued her curiosity. However, she was already in her 80's and decided that if she had limited energy, she would use it to take care of her collies and tend her gardens. Thus after a little while, she passed the set on to me. I wasn't sure that I wanted it, but I took it anyway. I experimented a little and made potato chips, bacon and a cake in the microwave with some of the pieces  However, I couldn't see myself using it with any regularity, so I gradually gave it away piece by piece. The last to go was the microwave pressure cooker. Now, I am totally comfortable cooking with a pressure cooker, but I had no interest in doing that in the microwave. Quite frankly, I thought that pot was a total waste. That was until I gave it to a friend. She didn't ask for it, but she got it anyway. (That's another story.) And she was thrilled. She didn't use it in the microwave, but soon figured out that it was the perfect pot/dish to take to a potluck dinner. You see, it was a good size--not too big, not too small. It was made from thick plastic that provided insulation to keep the food either hot or cold. And best of all, the lid clamped on so it was easy to transport with no spilling. Who knew it was such a perfect pot? I didn't when I thought of it only as a microwave pressure cooker.  But she opened my eyes and then I wanted it back. However, she won't give it to me. :) I guess instead of the pot, I'll have to satisfied that I was reminded that it always pays to take a second look at things. 

Oh wait, isn't a Second Look another one of my themes? That's a little ironic, isn't it? :)

Okay, maybe not None, but pretty close. There was a little lettuce that went slimy before it got used and a few almonds that I dropped on the floor at work. If it had been at home, I might have eaten them anyway, but not from my work floor.  However, the squirrels and blue jays really enjoyed them. 



This Week's True Food Confessions


You may have noticed that I haven't done a food post for a couple of weeks. I stopped taking pictures for a while, so with no pictures and no new recipes, I didn't have much to post about. I'd like to say that I didn't have any food pictures because I was preoccupied with taking pictures of all the spring flowers. But that wouldn't be true. I have been distracted by other things and paying attention to our eating hasn't been that high on my list. However, all has not been lost. I've been concentrating on working more vegetables into our dishes as well as serving more leafy greens. Also, we had some fresh asparagus from Uncle Billy--nothing like it! And we grilled our first non nitrate hot dogs. I've been meaning to try them for a year or more and we finally got around to it. They were good and while I wouldn't exactly call them a health food, they're a step up from the last ones we had. We're going to be gone for a few days, and I'm not sure what we'll be eating. However, I am taking along some healthy snacks for the car.

This accountability hopefully will help us to be more careful with our food and maybe save some money. This Week's Food Waste

I didn't quite make it all of the way through a bag of lettuce before the last of it went bad. Otherwise, we did pretty well.



This Week's True Food Confessions


Egg salad cornettes made by my sister-in-law-- one of the treats we had for Easter.
This week, we had a lovely Easter dinner with Ward's family, but for the rest of the week the food was fairly routine. So, I'm going to skip ahead to today's entries for National Poetry Month. As of yet, I have not featured the ever-important poetry type of the limerick. Here are a few food related ones that come from the book, Lots of Limericks selected by Myra Cohn Livingston. 

A Lady in Madrid
A lady who lived Mardrid
made soup a way no one else did:
