This Week's True Food Confessions
Baked chicken, spinach pie, kale, asparagus, fruit tray, steak sandwiches, Shepard's Pie...hearty and tasty |
Okay, if you really want True Food Confessions, it's the weekends that fall apart for us. Everyone's home (returning from school, etc.) and trying to accomplish a lot on the weekend. No one wants to cook and everyone wants to eat out. The perfect storm for the pizza we love so much along with whatever we pass by during our travels. The difference this past weekend was that we went to a cook out and we celebrated Theodore's birthday with grilled steaks. Theo, one of the Carnivores, made the rest of them very happy with this choice for his birthday meal. He also chose grilled asparagus and sauteed kale which made the non-carnivore happy. To top it all off, we sang Happy Birthday to him around a very rich cheesecake. Let's just say that everyone went away happy that night.
We did a little better on the week nights. Two days I got the food ready before I went to work and then put it in the oven when I arrived home. We were also able to have leftovers a couple of times. However, it seems that some of the leftovers disappeared during the middle of the night. Apparently sleeping makes some of us hungry. No new recipes for this week, but I have one that I want to try this weekend.
Until next time...
Yay for no food waste :) It's funny, I struggle with cooking during the week much more than on the weekend. But I find it enjoyable and look forward to having more time to cook on the weekend.
ReplyDeleteWhile cooking is okay, it is not what I would chose for a fun activity. Thus the weekends are filled with different things. The week has more structure to it, so I think that is why it is why we are more successful.
DeleteI do think cooking from scratch is a huge challenge when you're working or have a schedule which keeps you out of the house all day. So, hats off to you for getting things started in the AM, before work. Our big trouble spot with meals is weekend lunches. Saturdays I'm busy like everyone else and don't want to stop what I'm doing to go make a pot of soup or a rice dish. And Sundays, we don't get home from church until about 1 PM, and we're all starved (well, some of us, as others of us partake greatly in the coffee and cookie hour treats after church). It's hard to cook from scratch when you're just not home.
ReplyDeleteThat's it. We're just not at home much on the weekends, so it's more like catch as catch can. And that's okay. We have improved greatly from when I first started focusing on this. Luckily, we have enough wiggle room in our budget so we don't have to eat at home and cook from scratch for every meal.
DeleteI can totally relate to not wanting to cook when you're busy having fun. I feel the same way about movie nights with CatMan. It's our special time together, and while I want to serve him a nice meal, I don't want to waste our precious time stuck in the kitchen! Lasagna has been our salvation in that respect because I can make up a bunch of 2 person lasagnas ahead of time and freeze them. Then I just toss one into the oven and voila - we get a nice meal together and I didn't have to spend an hour slaving in the kitchen!
ReplyDeleteI think it's time for some more lasagna. Thanks for reminding me of it. Your nights with CatMan sound so special and they're that way because you make the effort. Good for you.
DeleteWell done!!!!!
