This was one of the things we had for Easter dinner. I like to make it because it's something everyone likes and is easy to make ahead of time. Of course, the time of year determines what actual fruits are used.
I'm playing a little game with myself and each day I'm trying to guess what fruit or veggie you will pick to feature. Today I lost! I was going with fennel or fig. Fruit salad is an excellent choice and the first thing I go for at a potluck.
I considered Fig because I have a small fig tree and a story about figs during Sunday School, but I didn't have time to develop that post.
The short version of the fig story goes, I had always loved Fig Newtons until, Mrs. McClung, my 4th grade Sunday School teacher brought some in for us to try because that was one of the foods of Biblical times. I didn't like them because I thought they were too sweet. After that, I didn't like Fig Newtons either. It's weird the way the mind works sometimes.
I do, too, but I don't make it all the time because we don't usually buy several different kinds of fruit at the same time. We're an apple and bananas family, mostly.
I would love a bowl of that right now!
